ampelographic collection. Matured in small concrete
barrels. It can be considered the legacy of an ancient

VINIFICATION AND REFINING
The grapes are pressed directly into small vitrified concrete barrels using the submerged cap method. The wine is left until the first waning moon of March, without any addition and without temperature control; it is then drawn off and left to rest for about 1 year in steel tanks.
